Does Vampire 600 V2 still needs dual video output? DIGITAL-VIDEO for hi-res and native amiga video output for stuff like classic workbench. Or is it all possible through DIGITAL-VIDEO ?

Digital-out on v600 is only for RTG stuff (workbench and RTG friendly software). Legacy display comes out from standard RGB Amiga port.

The majority of games from 80-90s are RGB-only. Some newer ones like Diablo or Quake (and many other pc ports) or Scummvm (LucasArts) that works on RTG can display on Digital-out.

you need a V4 if you want it all over DIGITAL-VIDEO
